Snickerdoodles


You have to make these! These are soooo yummy. The texture is light and fluffy and the cinnamon and sugar so moreish. I came across these on My Baking Adventures (I have been looking at so many baking blogs... just check out my list on the left!). Here's the recipe:

DOUGH
8 oz unsalted butter, softened
1-1/2 cups sugar
2 large eggs
2-3/4 cups plain flour
1-1/2 stp cream of tartar
1 tsp baking soda
1/4 tsp salt

CINNAMON SUGAR
1-1/2 tsp ground cinnamon
1/2 cup caster sugar

METHOD
Cream the butter and sugar until smooth. Add the eggs and mix until combined.
In a separate bowl, whisk together the flour, cream of tartar, baking soda and salt. Add to the butter mixture and mix on low speed until combined. The dough will be very soft and sticky.
Form into balls and roll into the cinnamon and sugar mix. Flatten them slightly with your fingertips. Place onto baking sheets with greaseproof paper and refridgerate for about an hour.
Preheat oven to 180C. Place cookies 2 inches apart and bake for about 12-13 minutes.
The cookies are supposed to be chewy so do not overbake.
Remove to a wire rack to cool.

  1. so these are the infamous snickerdoodles! Will make thses for an after school snack for Maddy & Ryan! Hi sis I'm back on the net! Got the computer yesterday and had it set up today. great to have it back now I can check out all those cooking websites you've been looking at! and I can keep up to daye with ur house! haven't downloaded MSN yet, you still use that?
